Annie's Mint Choc Chip Sandwich
If you've ever seen those chocolate sandwich biscuits filled with vanilla cream in the supermarket and thought "yes, but make it gelato" — this one's for you.
Annie's take swaps the shop-bought filling for our Mint choc chip gelato, and the result is somehow both nostalgic and a proper step up. It's also one of those desserts that looks like it took real effort, when actually most of the work happens days in advance and lives in your freezer until you need it.
It's a proper upgrade on the shop-bought version too. Every batch of our gelato is handmade using real, seasonal ingredients, with no artificial flavourings or colours — so you get all the nostalgia of a childhood favourite, minus the ingredients list you can't pronounce. How it's made
We start with a round chocolate shortbread-style biscuit — something firm but still a little chewy holds together best once it's frozen and being bitten into. Cut into neat rounds with a sharp cutter, two biscuits sandwich a scoop of Mint choc chip gelato, and the whole thing gets rolled in chocolate flakes, shavings, or whatever you fancy for a bit of extra crunch on the edge.

Then — and this is the bit we love — they go straight into the freezer until you're ready to serve. No last-minute assembly, no melting gelato while you wait for a biscuit to finish baking. Prep a batch on a quiet afternoon and you've got a freezer full of ready-to-go desserts for whenever the moment calls for one.
Why we like it
It's the kind of dessert that works everywhere — a garden party, a café dessert board, a "just because it's sunny" Tuesday. And because everything's prepped ahead and frozen solid, there's zero pressure when it's time to plate up. Pull it out, let it sit for a minute or two, and serve.
